Peach Cake

Ingredients:
Cake Batter:
- 2 cups of sugar
- 3 cups of all-purpose flour
- 4 tablespoons of margarine
- 3 eggs
- 1 ½ cups of milk
- 1 tablespoon of baking powder
Filling and Topping:
- 1 can of sweetened condensed milk
- 2 cans of milk
- 1 egg yolk (optional)
- 3 tablespoons of cornstarch
- 1 can of heavy cream
- 2 teaspoons of unflavored gelatin powder
- 2 tablespoons of water
- 1 can of peaches in syrup
Instructions:
Cake:
- Beat the egg whites until stiff and set aside.
- In a separate bowl, beat the egg yolks with sugar and margarine.
- Gradually add the milk and flour, mixing until smooth.
- Gently fold in the beaten egg whites and baking powder.
- Pour the batter into a greased round cake pan and bake in a preheated medium oven for about 40 minutes, or until a toothpick inserted comes out clean.
Filling and Topping:
- In a saucepan, combine the condensed milk, regular milk, egg yolk, and cornstarch.
- Cook over medium heat, stirring constantly until the mixture thickens and starts to boil.
- Remove from heat and stir in the dissolved gelatin (melted in a double boiler with the water) and the heavy cream. Let the mixture cool.
- Once the cake has cooled, slice it in half horizontally.
- Use the peach syrup to moisten both layers of the cake.
- Spread half of the filling between the cake layers and sprinkle chopped peaches on top (reserve some slices for decoration).
- Place the top layer of the cake and moisten it with more peach syrup.
- Cover the entire cake with the remaining filling and decorate with the reserved peach slices.
